I have found over the years of exercising horses or heavy work that you should feed them a high Protein diet. Protein builds muscle while carbohydrates give the horse energy, but when the carbohydrates are used up then the muscles start to deteriorate, this is why one should feed protein to rebuild muscle and it brings the horse back even stronger.
